On July 23, 2009, my husband and I decided to go vegetarian. I’d love to say that we made this choice out of great concern for the animals of the world, but we’re really just not that noble. My husband has Crohn’s Disease and we’ve both heard that a vegetarian lifestyle can help improve symptoms. In fact, I’ve heard of many health benefits associated with the lifestyle. We both figured it was worth a try!
Health benefits aside, I also had been feeling a bit bored with our weekly meal planning. Meals were getting routine and monotonous. I was ready for a change–some new recipes to grace my palate.
So, a few days after we made the decision to go veggie, using a Barnes and Noble gift card I received from some good friends, I bought a copy of the Betty Crocker Easy Everyday Vegetarian Cookbook. I created this blog, in part, to chronicle our adventures trying new recipes and learning to live the meatless life.
